- 1 head cauliflower, divided into florets
- 1 large yellow onion, cut into half moons
- 4 tbsp. olive oil
- salt and pepper to taste
- Preheat oven to 400F
- Place cauliflower florets on a backing dish.
- Add olive oil. Toss to let it coat evenly.
- Season with salt and pepper.
- Put it in the oven, stirring occasionally until it starts to brown, about 40 minutes.
- Add onions, continue stirring, until the onions caramelized and are tender.
