Roasted Cauliflower with Caramelized Onions


Roasted couliflower with onions, vegan, healthy, vegetarian

  •  1 head cauliflower, divided into florets
  •  1 large yellow onion, cut into half moons
  •  4 tbsp. olive oil
  •  salt and pepper to taste


  1.  Preheat oven to 400F
  2.  Place cauliflower florets on a backing dish.
  3.  Add olive oil. Toss to let it coat evenly.
  4.  Season with salt and pepper.
  5.  Put it in the oven, stirring occasionally until it starts to brown, about 40 minutes.
  6.  Add onions, continue stirring, until the onions caramelized and are tender.
